Surinamese Prawn Curry

A Surinamese Caribbean Chilli Prawn Curry

Ingredients
  

  • 3 tbsp oil
  • 1 Medium Onion Diced
  • 2 Medium Tomato's Diced
  • 4 Cloves Garlic Crushed
  • 1 tbsp Tomato Paste
  • 3 tsp Surinamese Curry Powder
  • 1/2 tsp White Pepper
  • 1/2 tsp Cumin Powder
  • 500 gr Deveined Prawns
  • Salt to Taste

Instructions
 

Surinamese Prawn Curry

  • On medium to low fire , heat the oil in a karahi pan, a wok or frying pan works equally well. Fruit the onions until it starts to brown on the edges, then add the garlic. Once the garlic starts to brown, add the tomatoes.
    Cook for 3-5 min or until soft.
  • Once the tomatoes have softened, add in the tomato paste and cook for a further 2 min. Now you may add the spices and fry for 4 min on medium to low fire. If it starts to dry out, add a touch of oil.
  • Now it's time to add the deveined prawns and cook for 2-3 min.
    Add 1 cup of water and cover for a further 3 minutes.
  • Now all there is left to do is enjoy!

Notes

TIP 1 : Add more or less water depending on how much gravy you prefer. 
 
TIP 2 : Prawn curry always tastes better the next day or when it has had time to rest.
 
TIP 3: Serve with rice or flat bread and garnish with coriander.
