Ingredients
- 2 tbsp olive oil
- 1 Onion Chopped
- 3 Garlic Cloves Crushed
- 1 Large Tomato Chopped
- 1 tbsp Surinamese Curry Powder
- ⅓ tsp White Pepper
- ⅓ tsp Chilli Powder (Optional)
- 500 Grams Deveined Prawns
- Salt To Taste
- 1 tsp Tomato Paste
- 1 cup Water
Instructions
- Cut and dice your onion and tomato. Crush the garlic and leave aside.
- Heat up your oil on a medium to low fire and add the onion. Once the onions start to brown, add the tomato. Cook for 2-3 minutes until the tomato starts to soften, then add the garlic. Continue to fry for another 2 minutes, and add the tomato paste.
- Now add the curry powder and the rest of the spices. You may need to add a little extra oil if it starts to dry up. Fry the spices on a low heat for about 4-5 minutes making sure to stir frequently.
- Add the prawns and salt to taste, continue to fry and stir for 5 minutes. Add 1 cup of water or less depending on how much gravy you'd like. Simmer for another 10 minutes on low heat.
- Garnish with coriander (optional) and serve with rice or flatbread.
