Cassava & Salted Cod

Telo & Bakkeljouw (Cassava & Salted Cod) is popular recipe in Surinamese cuisine.
Chunky crispy fried cassava chips dipped with fried salted cod in a tomato chili sauce.

Ingredients
  

  • 500g Salted Cod or 2 packs of 250g
  • 1 Medium Onion Finely chopped
  • 1 Madame Jeannette or Scotch Bonnet Finely chopped, you may leave seeds in or out or put in less pepper.
  • 4 Cloves Garlic Mashed
  • 2 Tomatoes De-seeded
  • 1 tbsp Tomato Puree
  • 1/2 tsp White Pepper
  • Oil per your choice You can choose to shallow fry in an oil with a low smoking point such as olive oil for a heathier choice. Or deep fry in an oil with a high smoking point. Both result in crispy cassava.
