Cassava & Salted Cod
Telo & Bakkeljouw (Cassava & Salted Cod) is popular recipe in Surinamese cuisine.Chunky crispy fried cassava chips dipped with fried salted cod in a tomato chili sauce.
Ingredients
- 500g Salted Cod or 2 packs of 250g
- 1 Medium Onion Finely chopped
- 1 Madame Jeannette or Scotch Bonnet Finely chopped, you may leave seeds in or out or put in less pepper.
- 4 Cloves Garlic Mashed
- 2 Tomatoes De-seeded
- 1 tbsp Tomato Puree
- 1/2 tsp White Pepper
- Oil per your choice You can choose to shallow fry in an oil with a low smoking point such as olive oil for a heathier choice. Or deep fry in an oil with a high smoking point. Both result in crispy cassava.
