Vegetarian Mantu, Dumplings

Ingredients

  • Wonton Wrappers
  • Red Split Peas
  • Ground Beef/ Vegan Beef
  • Carrots
  • Garlic
  • Onion
  • Yogurt
  • Tomato purée
  • Fresh Coriander

Spice Ingredients

  • Salt
  • Pepper
  • Sumac
  • Coriander Powder
  • Cumin Seeds
  • Turmeric
  • Paprika

Method:

  1. Prepare mantu filling:
    Heat oil in a pan, add half a diced onion; sauté and follow with 1 diced garlic. Mix to avoid burning.
    Add ground beef and cook for 2-3 minutes, add turmeric, pepper, salt and coriander powder. Cook through and allow to cool.
    Add 1 diced carrots and 1 diced onion uncooked.
  2. Prepare lentil dressing:
    Add oil to a pot, sauté 1 garlic. Place in turmeric, coriander and paprika powder. Mix and then add 2 tablespoons of tomato purée which was mixed with sumac and chilli powder, cook for a minute then add your lentils.
    Add water and allow to simmer until lentils are soft. Salt and pepper to taste.
     
  3. Folding the mantu:
    Now filling is cooled, place some onto a wrapper and put water on all four sides.
    Make all the ends meet in the centre and squeeze shut.
    Left over piece connect with each other. Should look like a dumpling yin and yang
     
  4. Steam dumplings in a ban marie then begin plating.
    On a large plate, spread over the garlic yogurt, then place the mantu, garnish with lentil dressing and sprinkle sumac
