Gajjar Ka Halwa, or Carrot pudding has roots in ancient Indian cuisine. Carrot has a natural sweetness and therefore makes it perfect for dessert. It is traditionally made in the Northern parts of India. And is served on special occasions such as weddings and religious festivals. 

This carrot halwa/pudding, is slow cooked in milk and butter. With a hint of cardamom and garnished with cashews and almonds. Although you may add seeds such pumpkin seeds.
